Anyway, I usually try to do something different when I serve them a second time. I typically don't use recipes for my meals, but I came across this one and I had all of the ingredients, so I thought I'd give it a try. Bean-and-Beef Enchilada Casserole. Since I don't eat beef I substituted the ground beef for ground turkey. Also, according to the directions it says to put half the meat mixture on top of the tortillas, and half the sour cream mixture on top of the meat. After doing the first layer as instructed, it made more sense to spread the sour cream mixture on the tortillas and top with the meat - that way you can spread the sour cream evenly.                                    ...
